RECIPE: Spicy Lebanese potatoes (Batata harra)

Great with barbecued fish like barramundi or mackerel

Why settle for ordinary roast potatoes when you can have these spicy, super spuds, which are as easy to make as they are tasty.

1 kg desiree potatoes
½ bunch fresh coriander
4 garlic cloves
1 spoon chilli flakes
2 spoons cumin seeds
1 spoon coriander seeds
4 spoons of olive oil
5 spoons of sunflower oil

Cooking method: Roasting

Boil potatoes for 20 mins, wash them, and cut them in cubes or wedges.

Add salt and pepper, olive oil and bake for another 15 mins on high heat (make sure to keep an eye on them and not burn them.)

Put the sunflower oil in a frying pan, mince the garlic, chop the coriander and add them until cooked and fragrant, add the chilli and remaining spices and stir.

To serve add the spice mix with the potatoes and mix well, add salt and pepper to your liking.

Serve with a leaf salad and some fresh yoghurt.
