RECIPE: Whipped skyr


Iceland is on so many bucket lists, but it’s a long way away. But now you can enjoy the very Icelandic skyr from the comforts of home.

 

Skyr is like a milk Greek yoghurt and can be eaten for breakfast or as a dessert. Here’s Hotel Rangá’s take on an Icelandic staple.  

 

MAKING SKYR

 

INGREDIENTS

500g plain skyr (which you can totally buy at Woolies)

50g icing sugar

150ml heavy cream

½ cup of oats 

2 tablespoons of honey

raspberries

 

METHOD

  1. Place all the ingredients in a bowl, whip together until the skyr becomes light and fluffy, set aside.
  2. Mix together half a cup of oats with two tablespoons of honey, bake in the oven at 200 degrees until the oats turn brown.

 

MAKING BLUEBERRY COULIS

 

INGREDIENTS

300g blueberries

100g sugar

100g water

 

METHOD

  1. Place all of the ingredients in a small saucepan. Bring to a gentle simmer over medium-low heat, simmer for 10 min, set aside and let cool.  After it cools, pour it into a blender for smoother consistency if preferred. 
  2. Place the whipped skyr in a glass bowl, drizzle the blueberry sauce on top of the mousse. Sprinkle with oats, and garnish with blueberries and raspberries
