Atout France, the French Government Tourist Bureau, together with the Nice Tourist Bureau, invites you to a cooking demonstration that takes its inspiration from the magic that is Nice.
While we can’t yet travel there, we can still enjoy some Niçoise dishes thanks to local chef Rosa Jackson who is hosting a special cooking class just for us.
After working for many years as a food writer, Rosa now hosts market tours and cooking demos in Nice.
Rosa is particularly inspired by Nice’s vibrant food markets and by Nice’s culinary traditions influenced by its Mediterranean neighbours. French and Italian influences come together in perfect harmony to create the fresh, flavourful Niçoise cuisine.
After taking the viewers on a short walking tour of her favourite Nice fresh produce markets, Rosa takes us into her home for a cooking class specifically targeting an Australian audience.
She prepares the most famous and traditional of Niçoise dishes: the iconic Pissaladière, a caramelized onion tart topped with olives and anchovies. In a couple of steps that are easily replicated at home, Rosa shares her secret tips for cooking this perfect dish for all seasons.
Viewers will also be able to indulge in the city’s fascinating history with a short, guided tour of Nice’s landmarks.

Rosa’s cooking class will be broadcast through a Facebook Premiere, on 14 July at 7pm AEST. The video will then be live on the Atout France website until 21 July.
